Freezes well. 500gr fresh or frozen raspberries 3 tablespoons sugar 300gr butter , non -salted 1 1/2 cups sugar 3 large eggs ( I use free range, better colour! ) Zest of 2 lemons 1 teaspoon vanilla essence 1 cup whole milk 3 1/2 cups premium quality flour 1 teaspoon baking powder Pre-heat oven 180°. Place raspberries into a bowl and sprinkle with 3T sugar. Toss, put aside. Cream butter and sugar. Add eggs, zest and vanilla essence. Stir in milk, flour and baking powder.
