OMEGA ME !
For years I have been trying to feed mackerel to my children. Atlantic mackerel is extremely high in vitamin B12. It is is also very high in omega 3, containing nearly twice as much per unit weight as does salmon.
Mackerel is good for the heart, bone development and apparently enhances intelligence. When I was pregnant I literally vacumed down this fish in the hope that it would not only render me capable of doing maths homework with future child but maybe also make my baby brilliant. No comments about my non-capacity in the maths arena!!
Last week my mother-in-law served Mackerel Crumble for lunch.
Delcious and simple to make, my children adore it. This is definately a recipe to share!
2 packets mackerel in Mustard Sauce
( available in all french supermarkets and organic shops, weight 169 gr.If you are not in France, use tinned mackerel, about 350gr and add 2 tablespoons dijon mustard,one tablespoon creme fraiche/sour cream)
1 red capsicum/red pepper, chopped finely
1 large tomato, cubed
2 celery sticks, sliced finely
1 shallot, minced
4 slices brown sandwich bread ( pain de mie complet)
100 gr butter
1/2 cup parmesan cheese
salt, pepper
Pre-heat oven 180°.
Open mackerel and chop into bite size pieces. Mix with chopped vegetables.
Put bread, parmesan and butter into food processor and pulse until crumb-like.
Put mackerel and veg mixture into a baking dish and cover with crumble mixture.
Do NOT press the crumble mixture.
Do NOT press the crumble mixture.
Bake at 180° for 20mins. Don't overcook, veg needs to stay crunchy.
Serve with fresh spring green asparagus.
