GREMOLATO GO GO

Refining with ease.....

I love lemon. 
Its a wonderful ingredient, totally underated for its power and zing.

The Italians ( yes, the race which taught the French to cook...) use lemon everywhere. One of my favourites, to add zest and clarity, is Gremolato - I suppose it could be called a condiment. 

Gremolato's 3 ingredient simplicity cleanses any dish which is overloaded in fat and adds personality and freshness to dishes which need a flavour kick.

The basic 3 ingredients are chopped parsley, lemon zest and crushed garlic. But you can add a dash of lemon juice to make it go further, change the herb to basil for example and even add a little orange zest for warmth.

My children love pan fried free-range chicken breast tossed in basilled gremolato served with a cool pasta, tomato and white onion salad. Its a doddle to make but its freshness and zing will have you reaching out for seconds. 


Chicken Breast Tossed in Basilled Gremolato

Free-range chicken breast, chopped into bite size portions
1 tablespoon chopped basil
1 tablespoon chopped flat leaf parsley
1 tablesoon crushed garlic
1 tablespoon chopped spring onion
1 tablespoon lemon zest
Juice of half a lemon
Olive oil
1/4 cup dry white wine
Salt and pepper

Chop chicken breast.Season with salt and pepper.
Heat olive in in a pan. Panfry chicken gently.
Avoid overly hot flame as chicken will turn tough.

When browned, pour in wine, cover and simmer gently until cooked through.
It will steam-cook in the wine. The result should be very tender.

Mix herbs, lemon zest, garlic and lemon juice in a bowl.

When chicken is cooked through drain off cooking juices and toss through Gremolata mix.
Serve with  cool pasta, cherry tomato and spring white onion salad.
