Mrs WOOD'S HEAVENLY HONEY CAKE

....simply because life is too short to go without.


We all have places
we go to in our dreams.
I am afraid to admit that mine always seem to involve food,waves and often, George Clooney.

Part of living away from home makes things of our childhood that much more valuable.

Some of my richest childhood memories are body surfing the waves at Onetangi Beach on Waiheke Island, followed by hot barbequed sausages wrapped up in bread with tomato ketchup being squeezed out of a plastic tomato. This is a place I go to in my dreams...the only difference being that in my dream George Clooney is usually sitting there squeezing the ketchup over my sausage. Another case for Freud?

One of the highlights of these lazy beach summers was Mrs Wood's Honey Cake.
Its a thing of the gods ( right up there with George!!) that everyone should taste.
With the days becoming shorter and greyer here I can think of nothing better right now than an enormous hunk of this divine delice and Mrs Wood has kindly agreed to allow me to publish her recipe.
This is one you should try...

I'm going to bake one this afternoon.Think of me in the northern hemisphere, leaning on the radiator, savouring honey cake whilst mind-travelling to the Onetangi of my childhood - golden beaches, clear blue skies, crashing waves, flowering pohutukawa trees, nikau palms, sun, laughter and love.
And where's George Clooney?




Mrs Wood's Heavenly Honey Cake

 9 x 13 inch pan
Preheat oven to 350 degrees
2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
Cut in: 1/2 cup butter
Break into a measuring cup: 1 egg, then fill with milk enough to make 1 cup.
Beat and add to the dry ingredients with 1 teaspoon vanilla.
Pour batter into a greased pan and cover with Honey Bee Glaze*.



Bake 25 minutes.
*Honey Bee Glaze
Stir and bring to boiling point over low heat:
1/2 cup sugar
1/4 cup milk
1/4 cup butter
1/4 cup honey
1 cup nuts (Mrs Wood uses walnuts)

    On another subject; food but not honey,
    any chance you could get from Emma her delicious "quiche" recipes or do you know a fab onion tart? I have tried making a couple and they just don't taste as divine as her ones. Her other tarts were great as well.
